Ingredients (Serves 1–2)
Strawberry Layer

½ cup fresh strawberries, hulled and chopped

1–2 tbsp sugar, honey, or maple syrup

1–2 tbsp water
Matcha Layer

1–2 tsp ceremonial-grade matcha

2–3 tbsp warm water (around 70–80°C, not boiling)
Latte Base

¾ to 1 cup cold milk (dairy or plant-based)

½ cup cooked tapioca pearls (boba)

How to Prepare
1. Cook the boba
Prepare the tapioca pearls following the package directions. Once done, mix them with a little sugar or honey to keep them soft and shiny.
2. Create the strawberry purée
Blend or mash the strawberries with your sweetener and water until smooth. Let it cool slightly in the fridge so it’s nice and fresh when layered.
3. Prepare the matcha
Place the matcha in a bowl, add the warm water, and whisk in a quick zig-zag motion until smooth and lightly frothy. Using ceremonial grade gives you a brighter colour, cleaner taste, and that classic matcha aroma.
4. Build your drink
Spoon the boba into a tall glass first.
Add a layer of strawberry purée.
Fill the glass with ice.
Pour in the chilled milk.
Slowly top with the whisked matcha to create a distinct layered effect.
