Matcha Brownies

If you love rich brownies but want something a little different, these Matcha Brownies deliver. They’re fudgy, chocolatey, and completely eggless, with matcha adding a smooth, earthy depth that balances the sweetness. The result is a soft centre with slightly set edges — indulgent but not overpowering.


Ingredients (Makes 12)

  • 100 g white chocolate, melted

  • ½ cup unsalted butter (or coconut oil)

  • ¾ cup sugar

  • ½ cup unsweetened applesauce (acts as binder)

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • 2 tbsp culinary matcha, sifted

  • Pinch of salt


Method

1. Prepare the tray
Preheat oven to 175°C (350°F). Line a baking tray with parchment paper.

2. Melt the base
Gently melt the butter and white chocolate together. Let it cool slightly so it doesn’t cook the mixture when combined.

3. Mix the wet ingredients
Whisk in sugar, applesauce, and vanilla until smooth and glossy.

4. Add the dry ingredients
Fold in flour, salt, and matcha until just combined. Avoid overmixing.

5. Bake
Pour into the prepared tray and bake for 20–25 minutes. The edges should look set while the centre remains slightly soft.

6. Cool and slice
Allow to cool fully before cutting into squares for clean edges.
