If you want a breakfast that feels familiar but a little elevated, this is it. Thick slices of bread are dipped into a smooth, lightly sweet matcha blend, then pan-toasted until golden with crisp edges. The matcha brings a soft, earthy depth that balances perfectly with syrup, fruit, or a light dusting of sugar. It’s easy to make and ideal for a relaxed weekend morning.
Ingredients (Serves 2–3)
-
1 cup milk (regular or oat)
-
1 tbsp ceremonial or culinary matcha, sifted
-
1 tbsp sugar or maple syrup
-
1 tsp vanilla extract
-
1 tbsp cornstarch (acts as the binder)
-
6–8 thick slices of bread (brioche or milk bread preferred)
-
Butter or coconut oil for the pan
Method
1. Prepare the batter
In a bowl, whisk the matcha, milk, sweetener, vanilla, and cornstarch until smooth and slightly creamy.
2. Soak the bread
Dip each slice into the mixture for about 5–6 seconds per side. Let it absorb, but don’t oversoak.
3. Cook
Warm butter or oil in a pan over medium heat. Cook each slice until both sides are golden and lightly crisp.
4. Serve
Plate while warm and add toppings of your choice.
Topping Inspiration
-
Mixed berries with maple syrup
-
Sliced banana with a drizzle of honey
-
Whipped cream and a light matcha sprinkle
-
Melted chocolate
-
Toasted nuts for added crunch
Tip
For a softer, richer result, go with brioche or thick milk bread. They hold the matcha mixture well and stay fluffy inside while crisping nicely on the outside.
